Sliced chicken breast in creamy mushroom sauce with melted cheese in a skillet

Ingredients

  • 600 g (1.3 lb) chicken breast fillets
  • 400 g (14 oz) button mushrooms, sliced
  • 2 onions, chopped
  • 2 garlic cloves, minced
  • 200 ml (3/4 cup) heavy cream
  • 50 g (1.75 oz) hard cheese, grated
  • Salt and pepper to taste

Instructions

  1. Slice the chicken fillets and pound lightly on both sides. Rub with salt, pepper, and spices.
  2. Sear the chicken in a hot skillet until golden on both sides.
  3. In the same skillet, sauté the onion, add the mushrooms, and cook until done.
  4. Pour in the cream and add the grated cheese, simmering over low heat until the sauce thickens.
  5. Return the chicken to the sauce and simmer 5 more minutes over low heat.

Tips

  • Pound the fillets to an even thickness so they cook evenly and stay juicy.
  • Brown the mushrooms well before adding the cream — that caramelization adds real depth to the sauce.
  • Keep the heat low once the cheese goes in; a gentle simmer keeps the sauce silky instead of grainy.
