Ingredients
- 2 large chicken breasts (about 500 g)
- 2 medium potatoes, thinly sliced
- 1 cup fresh parsley, chopped
- 100 g cream cheese
- 2 garlic cloves, minced
- 100 g hard cheese, grated
- 2 tbsp mayonnaise
- Salt, pepper, seasonings to taste
Instructions
- Toss the thin potato slices with salt and spices and layer them in a baking dish.
- Butterfly the chicken breasts into cutlets, pound flat, and season.
- Mix the parsley, garlic, cream cheese, and half of the grated cheese into a filling.
- Spread the filling over the chicken, roll up tightly, and place over the potatoes.
- Brush with mayonnaise, top with the remaining cheese, and bake at 200°C (400°F) for 1 hour.
Tips
- Pound the chicken to an even thickness so the roll-ups cook through uniformly.
- Roll the chicken tightly and place seam-side down so it holds its shape; find more rolling technique guidance at Allrecipes.
- If the cheese browns too fast, cover the dish with foil for the first 40 minutes.
