Ingredients
- 750 g (1.65 lb) cottage cheese (5% fat)
- 100 g (3.5 oz) sour cream (25–30% fat)
- 3 eggs
- 100 g (1/2 cup) sugar
- 30 g (2 tbsp) cornstarch
- 1/2 tsp vanilla extract
- Pinch of salt
- 150 g (5 oz) fresh or frozen berries
- Butter for the dish
Instructions
- Blend the cottage cheese, sour cream, eggs, sugar, cornstarch, vanilla, and salt until completely smooth.
- Grease a baking dish with butter and pour in the mixture.
- Scatter the berries evenly over the top.
- If using frozen berries, toss them in a spoonful of cornstarch first to keep them from releasing too much juice.
- Bake at 160°C (320°F) for about 20 minutes, until set and lightly golden.
Tips
- Blend the mixture until completely smooth — any lumps will make the texture grainy instead of silky.
- Toss frozen berries in a spoonful of cornstarch first so they release less juice into the bake.
