Golden seared chicken fillets nestled in a garlicky, cheesy mushroom cream — this one-pan dinner is comfort food at its easiest. It is weeknight-friendly like our Baked Chicken Meatball Envelopes, cozier than Healthy Cabbage Chebureki with Meat, and just as family-approved as our Juicy Chicken and Vegetable Patties.

Ingredients
- 1.5 chicken fillets
- 200 g (7 oz) mushrooms, sliced
- 150 ml (2/3 cup) cream
- 50 g (1.7 oz) cheese, grated
- 1 garlic clove, minced
- Salt and black pepper, to taste
Instructions
- Slice each fillet lengthwise into 2 thinner pieces. Sear them 2-3 minutes per side in a hot pan, then set aside.
- In the same pan, sauté the garlic until fragrant, add the mushrooms, and cook for 5 minutes until golden.
- Pour in the cream, stir in the cheese, and return the chicken to the pan.
- Simmer 2-3 minutes over low heat until the sauce thickens and coats the chicken. Season to taste and serve.
Tips
- Don’t overcrowd the pan when searing — the fillets should brown, not steam; work in batches if needed.
- Let the mushrooms take on real color before adding the cream; that deep browning is where the flavor lives. For a full breakdown of mushroom technique, Allrecipes has a handy primer.
- Use a good melting cheese like mozzarella or gouda for the silkiest sauce.
