Ingredients

  • 10 g gelatin + 100 ml milk
  • 10 g gelatin + 50 ml water
  • 350 g (12.3 oz) sour cream
  • 280 g (10 oz) fruit jam or confiture
  • Sweetener to taste

Instructions

  1. Bloom the gelatin: soak one portion in the milk and the other in the water, letting each swell.
  2. Gently warm the milk-gelatin mixture (do not boil), then stir in the sour cream and sweetener until smooth.
  3. Warm the water-gelatin mixture and mix it with the jam until combined.
  4. Layer the mixtures in glasses or a mold and chill for 3-4 hours until set.

Tips

  • Never boil the gelatin mixtures — high heat destroys its setting power.
  • Any jam works beautifully; raspberry or cherry are especially good.
  • Chill for at least 3-4 hours, or overnight for the firmest set.
