Baked stuffed chicken breast with mushroom filling and melted golden cheese

Ingredients

  • 2 chicken breasts
  • 250 g (9 oz) mushrooms
  • 1 onion, chopped
  • 1 sweet tomato, diced
  • 2 garlic cloves, minced
  • 150 g (5.3 oz) grated cheese
  • 15 g (1 tbsp) butter
  • 2 tbsp mayonnaise or sour cream
  • Salt and pepper to taste

Instructions

  1. Sauté the mushrooms with the onion in butter until golden.
  2. Mix the sautéed mushrooms with the diced tomato, garlic, and mayonnaise or sour cream.
  3. Cut a deep pocket into each chicken breast without cutting through.
  4. Stuff the pockets with the mushroom mixture, then top with the tomato mix and grated cheese.
  5. Bake at 190°C (375°F) for 25-30 minutes until cooked through.

Tips

  • Cut the pocket deep but be careful not to cut through the breast.
  • Pound the breasts to an even thickness so they bake evenly.
  • Let the chicken rest for 5 minutes before slicing.
