Golden, juicy, and endlessly family-friendly, these homemade chicken cutlets are the weeknight hero your dinner rotation needs. A crisp breadcrumb coating bakes up beautifully around a tender, savory chicken patty — and if you love cutlet-style dinners like our Crispy Chicken Cutlets Stuffed with Ham and Cheese, this oven-baked classic will feel like home.

Ingredients
- 1.5 kg (3.3 lb) ground chicken
- 200 g (7 oz) white bread
- 200 g (7 oz) onion
- 4–5 garlic cloves
- 1 tbsp salt
- 1 tsp black pepper
- Breadcrumbs for coating
- Oil for greasing
Instructions
- Soak the bread in water, squeeze it out, and blend with the onion and garlic until smooth.
- Combine with the ground chicken, salt, pepper, and paprika; mix well and slap the mixture against the bowl to firm it up.
- With oiled hands, shape patties and coat them in breadcrumbs.
- Arrange on a greased baking sheet, brush with oil, and bake at 190°C (375°F) for 25–30 minutes until golden.
Tips
- Do not skip the slap. Throwing the mixture firmly against the bowl a few times develops the protein and keeps the cutlets juicy and compact — a trick Serious Eats uses for meatballs and patties too.
- Oil your hands before shaping. Ground chicken is sticky, and oiled hands give you smooth, even patties with an even crumb coating. For more cozy cutlet inspiration, see our Cheese-Stuffed Meat Cutlets.
- Rest them before serving. A 5-minute rest lets the juices redistribute so every bite stays moist — the same advice you will find on Allrecipes for perfect patties.
