Ingredients

  • 2 eggs
  • 300 g (10 oz) cottage cheese (farmer cheese)
  • 100 g (3/4 cup) flour
  • 40 g (1/4 cup) hard cheese, grated
  • 1 tsp baking powder
  • 5 g (1 tsp) sesame seeds
  • Salt, to taste

Instructions

  1. Mix one whole egg plus one egg white with the cottage cheese, baking powder, flour, and salt.
  2. Add the grated cheese and knead by hand until smooth.
  3. Shape into 9 balls, place on a parchment-lined baking sheet, brush with the remaining yolk, and sprinkle with sesame seeds.
  4. Bake at 180 C (350 F) for 30-35 minutes until golden.

Tips

  • Don’t overmix the dough once the flour goes in — just knead until smooth so the buns stay tender.
  • Brush the yolk glaze evenly and sprinkle the sesame seeds right away so they stick during baking.
  • These buns keep well for a day or two in an airtight container; warm them briefly in the oven before serving.
