Some weeknights call for pizza, but not for the wait — this tortilla pizza with tuna and eggs delivers all the cheesy, savory satisfaction in about 20 minutes, using two humble tortillas as the crust. Layered with spinach, flaky tuna, sweet onion rings and eggs baked right on top, it’s a high-protein dinner the whole table will love. Ingredients
- 2 large tortillas
- 100 g (1 cup) cheese, grated
- A handful of fresh spinach
- 1 can tuna in water, drained
- 1 small onion, sliced into rings
- 3-4 eggs
- 1 tbsp vegetable oil
- Pepper blend, to taste
Instructions
- Place one tortilla in a baking dish (trim it to fit the dish if needed).
- Sprinkle with grated cheese, cover with the second tortilla, then layer the spinach, drained tuna, and onion rings. Crack the eggs on top, drizzle with a little oil, season with the pepper blend, and add a little more cheese.
- Bake at 180 C (350 F) for 20 minutes, until the eggs are set and the cheese is golden.
Tips
- Drain the tuna very well and pat the spinach dry — excess moisture is the enemy of a crisp tortilla base.
- Crack each egg into a small cup first, then slide it onto the pizza so the yolks stay intact and evenly spaced.
- For runnier yolks, pull the pizza at 18 minutes; for fully set eggs, give it the full 20. Serious Eats has excellent guides on nailing baked-egg timing.
