Ingredients
- 2-3 large lavash sheets
- 200 g (7 oz) cottage cheese (farmer cheese)
- 100 g (1 cup) hard cheese, grated
- 1 egg, plus 1 yolk for brushing
- Fresh herbs, chopped
- Salt, to taste
- Sesame seeds, for sprinkling
Instructions
- In a bowl, mix the cottage cheese, egg, grated cheese, herbs, and a little salt.
- Stir until smooth.
- Cut the lavash into small rectangles, spoon the filling onto each, and roll up.
- Brush with the yolk, sprinkle with sesame seeds if you like, and bake at 180 C (350 F) for 10-15 minutes until golden.
Tips
- If the lavash sheets are brittle, cover them with a damp towel for a few minutes — they become soft and easy to roll.
- Brush the yolk generously and evenly for a glossy, golden top on every roll.
- Cottage cheese is a great protein source; the USDA suggests including protein foods like dairy in a balanced breakfast.
