Ingredients
- 2 buns or rolls
- 2 eggs
- 40 ml (about 3 tbsp) milk
- 1 tsp honey
- 2 small rounds of goat cheese
- 3 roasted red peppers, sliced
- Coconut oil for frying
Instructions
- Whisk the eggs with the milk and honey.
- Split the buns and soak them in the egg mixture for 5 minutes.
- Heat a coconut-oil-greased pan over medium heat and fry the buns on both sides until golden.
- Top one half of each bun with goat cheese and roasted pepper slices, then close with the other half. Serve warm.
Tips
- Let the buns soak the full 5 minutes so the custard reaches the center — dry spots will not brown evenly.
- Keep the heat at medium; the honey in the custard can scorch quickly over high heat. For more classic technique ideas, browse the breakfast recipes at Allrecipes.
- Swap the roasted peppers for sliced fresh figs or caramelized onions for a different twist.
