These baked lavash rolls with turkey and cheese are the weeknight hero you have been waiting for: seasoned ground turkey and melty cheese rolled up in soft lavash, brushed with a milk-and-egg glaze, and baked until golden and crisp. They slice beautifully, feed a crowd, and reheat like a dream. Ingredients
- 2 large lavash sheets
- 300 g (10.5 oz) cheese (any kind), grated or sliced
- Fresh herbs, chopped
- 500 g (1.1 lb) ground turkey
- 1 onion, finely chopped
- 1 egg
- Salt and black pepper to taste
- Milk and sesame seeds for topping
Instructions
- Spread the seasoned ground turkey (mixed with chopped onion, salt, and pepper) over the lavash sheets, sprinkle with cheese and herbs, and roll up tightly.
- Brush the rolls with a mixture of milk and beaten egg; sprinkle with sesame seeds.
- Bake at 180C (350F) for 40 minutes until golden and cooked through.
Tips
- Roll the lavash up tightly so the filling stays put and every slice holds its spiral. Find more baking guidance at Allrecipes.
- Do not skimp on the milk-and-egg brush — it gives the rolls their deep golden shine. See Serious Eats for more on egg washes.
- Let the rolls rest 5 minutes before slicing so the cheese sets and the spirals stay neat.
