Ingredients
- 1 cup rolled oats (the 15-minute kind)
- 2 cups almond milk
- 2 cups water
- 1 banana
- 2 tbsp cane sugar
- Pinch of salt
- 1 tbsp sugar
- Pecans and walnuts, for serving
Instructions
- Cover the oats with the water and set over medium heat so the flakes open up.
- When half the water has evaporated, add the almond milk.
- Add a pinch of salt and the sugar; cook 10-15 minutes more on medium heat. Take it off the heat while slightly thinner than you want it; cover and rest 5 minutes – it will thicken to the perfect consistency.
- Caramelize the bananas: warm coconut oil with the cane sugar, add the bananas, and toss until fully caramelized.
- Serve the porridge in deep bowls topped with bananas and nuts; drizzle with honey if desired.
Tips
- Take the porridge off the heat while it is slightly thinner than you want — it thickens to the perfect consistency as it rests.
- Warm the bananas gently in coconut oil with the cane sugar so they caramelize without burning.
