Golden high-protein cheese bread loaf with herbs, sliced to show the soft crumb

Ingredients

  • 2 eggs
  • 150 g (2/3 cup) kefir
  • 50 g (1.8 oz) hard cheese, grated
  • Fresh herbs, chopped, to taste
  • 1 garlic clove, minced
  • 170 g (1 1/3 cups + 1 tbsp) rice flour
  • 5 g (1 tsp) baking powder
  • Salt and spices to taste

Instructions

  1. Whisk the eggs with the kefir.
  2. Add the grated cheese, minced garlic, and chopped herbs.
  3. Stir in the salt, spices, baking powder, and flour. Knead into a dough.
  4. Transfer to a loaf pan and bake in a preheated oven at 180C (350F) for about 35 minutes until golden and firm.

Tips

  • Use full-fat kefir for the moistest crumb — low-fat versions can make the loaf dry. Find more healthy baking guidance at Allrecipes.
  • Let the bread cool in the pan for 10 minutes before turning it out so it does not crumble.
  • Fold the cheese and herbs in last and do not overmix the dough. See whole-grain baking tips at Serious Eats.
