This cottage cheese casserole is the kind of easy dessert you will make again and again: light, creamy, and gently sweet, with a golden top and a soft, custardy middle. It blends up in minutes, bakes into a beautiful high-protein treat, and is just as good warm from the oven as it is chilled the next day. Add raisins and a touch of orange zest for a bright, homemade finish.

Ingredients
- 700 g (3 cups) cottage cheese
- 3 eggs
- 110 g (1/2 cup) sour cream (20-25%)
- 100 g (1/2 cup) sugar
- Pinch of salt
- Vanilla to taste
- 30 g (3 tbsp) cornstarch
- 30 g (2 tbsp) raisins
- Orange zest to taste
Instructions
- Blend everything except the raisins with an immersion blender until smooth. Stir in the rinsed and dried raisins.
- Grease the pan or line with parchment.
- Optionally drizzle a little melted butter on top. Bake at 170°C (340°F) for 40-50 minutes until set and lightly golden.
Tips
- Blend until completely smooth for the silkiest texture, and let the casserole cool before slicing so it sets cleanly.
- Rinse and dry the raisins well so they stay plump and do not sink to the bottom.
