Ingredients
- 2 chicken breasts
- 1/2 orange, sliced
- 1 lime, sliced
- Dried herbs
- For the sauce: 2 tbsp olive oil
- 2 tbsp honey
- Salt and pepper
- Juice of 1/2 orange
Instructions
- Score the chicken breasts lightly.
- Preheat the oven to 180°C (350°F).
- Cut two large pieces of parchment, fold as for parcels, and tie the edges with string to form boat shapes.
- Layer orange and lime slices, dried herbs, and chicken in each parcel.
- Pour generously over the sauce (let it soak in a little) and bake 25 minutes.
Tips
- Let the parcels rest for a few minutes before opening so the juices settle and the steam does not escape too quickly.
- Check that the chicken is cooked through before serving; the USDA offers helpful guidance on safe cooking temperatures for poultry.
