This light tuna and apple salad is crisp, creamy, and ready in minutes. Flaky tuna, sweet apple, and crunchy carrot come together in a tangy yogurt dressing for a fresh, protein-packed lunch.

Ingredients
- 1 carrot, grated
- 1 apple, grated
- 1.5 tbsp lemon juice
- 1 can tuna in its own juice, drained
- 2 tbsp Greek yogurt or sour cream
- 2 green onion stalks, sliced
- Salt to taste
- Fresh parsley
- Lettuce leaves for serving
Instructions
- Grate the carrot and apple on a coarse grater; immediately toss the apple with lemon juice so it does not brown.
- Flake the tuna with a fork and mix with the apple and carrot. Add the sliced green onion, yogurt, a little more lemon juice, and salt.
- Toss gently. Serve on lettuce leaves garnished with parsley.
Tips
- Toss the apple with lemon juice right away to keep it bright and fresh.
- Chill the salad for 15 minutes before serving for the best flavor.
- Swap Greek yogurt for sour cream if you prefer a richer dressing.
