Turkey and vegetable quinoa skillet with carrots, green beans and herbs in a pan

Ingredients

  • 150 g (3/4 cup) quinoa
  • 300 g (10.5 oz) turkey breast fillet
  • 1 carrot
  • 1 onion
  • 2 garlic cloves
  • 100 g (3.5 oz) green beans
  • Vegetable oil
  • Ground coriander (and cumin to taste)

Instructions

  1. Cut the turkey into medium pieces and sear in oiled skillet until done; set aside. In the same pan, brown the chopped onion.
  2. Slice the carrot into half-rings and the garlic into plates; add to the onion with the green beans and cook a couple of minutes.
  3. Salt, add the spices (crush cumin in your palms) and ground coriander. Add the quinoa and cover with hot water. Cover and simmer until done. Stir in the turkey and serve.

Tips

  • Rinse the quinoa well before cooking to remove any bitterness and keep the grains light and fluffy.
  • Do not overcook the vegetables — a little bite keeps the skillet colorful and fresh. For more healthy one-pan ideas, browse allrecipes.com and usda.gov for nutrition guidance.
