Ingredients
- 200-250 g (7-9 oz) feta or bryndza cheese
- 250 g (9 oz) cherry tomatoes
- 250-300 g (9-10 oz) any pasta
- 1 tsp herbes de Provence
- 1-2 tbsp olive oil
- Black pepper
Instructions
- Place the feta and cherry tomatoes in a baking dish. Bake at 180°C (350°F) for 15-20 minutes.
- Meanwhile cook the pasta. Mash the burst tomatoes with a fork — the sauce is ready. Toss with the pasta, season with black pepper and serve.
Tips
- Save a cup of pasta water before draining — a splash loosens the feta sauce to a perfect creamy consistency.
- Use a block of feta rather than crumbled feta for the creamiest melt. For more pasta inspiration, browse allrecipes.com and seriouseats.com.
- Add fresh basil or spinach at the end for color — or try Baked Pasta with Bacon, Spinach and Cherry Tomatoes on another night.
