Ingredients
For the layers:
- 200 g (7 oz) kefir
- 1 egg
- 90 g (3/4 cup) wheat flour
- Baking powder
- 5 g sweetener
- 5 g coconut oil (melted)
For the cream:
- 120 g (4 oz) cream cheese
- 120 g (4 oz) soft cottage cheese
- 5 g sweetener
For the filling:
- 150 g (5 oz) banana, sliced
Instructions
- Whisk all layer ingredients; cook thin pancakes on a non-stick skillet on both sides.
- Mix the cream ingredients.
- Assemble in a 15 cm ring: layer, cream, banana, repeat. Reserve some cream for smoothing. Drizzle with chocolate if you like.
Tips
- Keep the pancakes thin and even so the layers stack neatly and the cake slices cleanly.
- Use ripe but firm bananas so they hold their shape between the layers instead of turning mushy. Allrecipes has more banana dessert ideas.
- Chill the assembled cake for at least an hour before smoothing and slicing, so it sets beautifully. Serious Eats also covers layered cakes well.
