Crispy on the outside, glossy and sweet-savory on the inside, this Asian-style beef comes together fast and tastes like your favorite takeout, only fresher. A quick cornstarch crust, fragrant ginger, garlic and chilies, and a sticky soy glaze make it perfect over rice or noodles. Ingredients
- 450 g (1 lb) beef, thinly sliced into strips
- 2 tbsp cornstarch
- Salt and black pepper to taste
- 2 garlic cloves, minced
- 1 tsp grated fresh ginger
- 2 green onions, sliced
- 2 chili peppers, finely chopped
- 100 ml (about 1/3 cup + 1 tbsp) soy sauce
- 50 ml (3 1/2 tbsp) water
- 2 tbsp sugar
- 1 tsp rice vinegar
- Olive oil for frying
Instructions
- Toss the beef strips with the cornstarch until well coated.
- Sear the beef in hot olive oil over high heat until crusty; remove from the pan.
- Add a little more oil to the same pan and saute the ginger, garlic, and chilies.
- Whisk together the soy sauce, water, rice vinegar, and sugar; pour into the pan and bring to a boil.
- Stir in the green onions, then return the beef and toss to coat.
- Simmer until the sauce thickens and glazes the beef (dust with a pinch of cornstarch if the sauce stays thin).
Tips
- Slice the beef as thinly as you can, and keep the pan very hot so it sears rather than steams.
- Do not crowd the pan; sear in batches for the crispiest crust.
