These crisp potato nests are golden and cheesy on the outside, with a soft baked egg nestled in the center. They look impressive, taste comforting, and make a wonderful brunch or easy breakfast.

Ingredients
- 250 to 300 g (9 to 10.5 oz) mashed potatoes
- 80 g (2.8 oz) cheese, grated (reserve 30 g for topping)
- 4 large eggs
- 2 tbsp all-purpose flour
- Salt to taste
- 1 bunch fresh herbs, chopped
Instructions
- Mix the mashed potatoes with 1 raw egg, most of the grated cheese, herbs, and salt; stir in the flour.
- With wet hands, form patties with a deep well in the center and raised edges.
- Bake at 180 C (350 F) for 15 minutes, then top with the remaining cheese, crack an egg into each well, and bake for a few more minutes until the whites are set.
Tips
- Use wet hands to shape the nests so the mixture does not stick.
