These nori roll envelopes are a fresh, light and delightfully hands-on way to enjoy sushi flavors at home. Creamy cheese, crisp cucumber and silky salmon are tucked into neat seaweed parcels that are perfect for lunchboxes, light dinners or a fun snack board.

Ingredients
- 2-3 sheets of nori
- 200 g (7 oz / about 1 cup) cooked sushi rice
- 3 tbsp cream cheese
- 1/2 cucumber, cut into sticks
- 100 g (3.5 oz) lightly salted salmon, sliced
Instructions
- Cut each nori sheet in half. On one corner of each half, layer rice, cream cheese, cucumber sticks, and salmon.
- Dampen the nori with water and fold into an envelope, sealing the edges.
Tips
- Use slightly warm rice so the nori softens just enough to fold without tearing.
- Do not overfill the envelopes, or the edges will be hard to seal neatly.
- Serve with soy sauce, pickled ginger or a squeeze of lemon for extra freshness.
