This light apple strudel from lavash is crisp, cinnamon-scented and ready in about 30 minutes, with no pastry dough required. Tender sauteed apples, creamy cheese and sweet raisins are rolled in thin lavash and baked until golden. Ingredients
- 250 g (about 2 medium) apples
- 80 g (1 large sheet) lavash
- 30 g (2 tbsp) raisins
- 70 g (about 1/3 cup) cream cheese
- 5 g (1 tsp) coconut oil
- Cinnamon, to taste
- 1 egg yolk
- Sweetener, to taste
Instructions
- Dice the apples and toss with cinnamon and sweetener. Saute in coconut oil for 5 minutes.
- Spread the lavash with cream cheese, add the apples, and roll up tightly. Brush with egg yolk.
- Bake at 180 C (350 F) for 15 minutes. Dust with powdered sugar and serve with ice cream if desired.
Tips
- Pat the apple filling dry before rolling so the lavash stays crisp.
- Roll firmly and place the seam underneath so the strudel holds its shape in the oven.
- Serve warm for the best contrast between the crisp shell and the soft, cinnamon apples.
