Ingredients

  • 212 g (about 1 1/2 cups) boiled peeled potatoes
  • 180 g (about 3) raw eggs
  • 70 g (about 1/4 cup) milk (1.5%)
  • 3 g (1 tsp) butter
  • 4 g (1 tsp) sunflower oil

For the cheese cap:

  • 146 g (1 1/2 cups) cheese (45%)
  • 33 g (2 tbsp) sour cream (10%)
  • 46 g (3 tbsp) mayonnaise
  • 17 g (3 cloves) garlic

For the filling:

  • 439 g (15 oz) ground beef
  • 421 g (15 oz) ground chicken breast
  • Salt, dried dill, black pepper

Instructions

  1. Mash the boiled potatoes with 3 eggs, butter, milk, salt, and dried dill into a stiff puree.
  2. Season the mixed ground meat with onion (optional), salt, and pepper.
  3. Mix the cheese, sour cream, mayonnaise, and garlic for the cap.
  4. With wet hands, form balls and place on a baking sheet. Press hollows with an oiled cup.
  5. Fill with mince, cover with the cheese cap, and bake at 200 C (400 F) for 20 minutes.

Tips

  • Keep your hands wet when shaping the nests so the potato puree does not stick.
  • Make the puree stiff, not runny, so the nests hold their shape in the oven.
