Ingredients
- 200 g (about 2 cups) broccoli
- 90 g (1 small) onion
- 100 g (1 cup) hard cheese, grated
- 50 g (1 small) carrot
- 300 g (1 1/4 cups) cream (10%)
- 2 garlic cloves
- 20 g (1 1/2 tbsp) butter
- 400 g (1 2/3 cups) chicken broth
- 20 g (2 tbsp) flour
- Salt and spices (sweet paprika, lemon pepper), to taste
Instructions
- Melt the butter in a pot (about 1.5 liters).
- Saute the chopped onion, add the garlic. When the onion is soft and golden, stir in the flour.
- Add the broth in parts, stirring — lumps form at first but whisk out quickly.
- Season, add the chopped broccoli and grated carrot.
- Simmer covered on below-medium heat for 20 minutes. Stir in the cream and grated cheese and cook on low until the cheese melts, about 7 minutes.
Tips
- Whisk the broth in gradually for the smoothest, lump-free soup base.
- Keep the heat low after adding the cheese so it melts evenly without splitting.
