Ingredients
- 1 trout
- Salt and pepper
- Olive oil
- Lemon juice
Instructions
- Clean the fish, rinse, and pat dry.
- Score both sides, then rub in salt and pepper by hand.
- Transfer to a dish, drizzle with lemon juice and olive oil, and marinate 20 minutes.
- Place on foil shaped into a boat, drizzle with a little more oil, and bake at 200 C (400 F) for 30 minutes.
- Serve sprinkled with cracked pepper and green onion.
Tips
- Pat the fish very dry before seasoning so the skin crisps nicely.
- Do not overbake; the trout is done when the flesh flakes easily with a fork.
- Serve with a simple salad or steamed vegetables for a complete healthy meal. For more fish dinner ideas, see our Chicken and Vegetable Stew with Sour Cream for a cozy alternative, and browse classic baked fish recipes at Allrecipes.
