Ingredients
- Salmon or other red fish fillets
- 200 ml cream (10-20%)
- 1 tbsp cornstarch (corn only — do not substitute potato starch)
- 2-3 tbsp red caviar
- Salt and black pepper
- Vegetable oil for frying
Instructions
- Season the fish with salt and pepper. Either pan-fry on high heat in vegetable oil on both sides, or bake at 180°C (350°F) for 20-25 minutes.
- Warm the cream in a saucepan, whisk in the cornstarch, season with salt and pepper, and stir until thickened.
- Let the sauce cool slightly, stir in the red caviar, and pour immediately over the fish.
Tips
- Do not boil the sauce after adding the caviar — gentle warmth keeps the pearls intact.
- Pat the fillets dry before frying for a better golden crust.
