This banana matcha cake is soft, fragrant and just sweet enough, with earthy green-tea notes and bursts of tart raspberries in every slice. Ripe bananas keep the crumb moist for days, while the matcha gives the cake a beautiful pale-green colour. It is an easy one-bowl bake that looks as good as it tastes — perfect with a cup of tea or as a light dessert. Ingredients
- 3 ripe bananas
- 1 egg
- 150 g rice flour
- 1 tsp baking powder
- 100 ml milk
- 1 tbsp matcha powder
- 80-100 g raspberries
Instructions
- Mash the bananas and combine with all the remaining ingredients.
- Pour into a baking pan.
- Bake at 180°C (350°F) for 30-40 minutes, until a skewer comes out clean.
Tips
- Use very ripe bananas with brown spots — they mash easily and add the most sweetness.
- Sift the matcha with the flour so it blends evenly and the crumb stays a soft, even green. If you are new to matcha, Serious Eats has a helpful guide to choosing good-quality powder.
- Fold the raspberries in last and handle them gently so they keep their shape. For more chocolate inspiration, try our Healthy Coffee Chocolate Cake.
