This healthy Easter kulich keeps everything you love about the festive classic — a tender crumb and a sweet glaze — with lighter cottage cheese and oat flour in the batter. It bakes tall and golden, and it is just as welcome on the holiday table as our Royal Cottage Cheese Cake with Blueberries or our Healthy Pumpkin Layer Cake with Cottage Cheese Cream.

Ingredients
- 180 g cottage cheese (2%)
- 2 eggs (about 115 g)
- 60 g milk (1.5%)
- 10 g coconut oil, melted
- 70 g all-purpose flour
- 70 g oat flour (or ground rolled oats)
- 5 g baking powder
- 10 g sweetener (mild sweetness; add more to taste)
- Dried fruit (optional)
Instructions
- You will need 2 pans, 6 cm high and 10 cm in diameter.
- Blend the cottage cheese until smooth, add the eggs, and blend again.
- Warm the milk with the sweetener in the microwave so it dissolves easily.
- Add the melted coconut oil to the milk and blend once more, then sift in both flours with the baking powder.
- If using dried fruit: rinse, dry, chop, and toss in cornstarch or flour.
- Divide the batter into the pans, filling about 2/3.
- Bake at 180°C (350°F) for about 60 minutes. Test with a toothpick.
Tips
- Do not open the oven during the first 40 minutes, so the kulich rises evenly and does not sink.
- If the top browns too quickly, cover it loosely with foil — for more baking guidance, visit Serious Eats.
- Cool the kulich completely before glazing so the topping sets beautifully.
