Ingredients

  • 1 head cauliflower
  • 50 g (1/2 cup) breadcrumbs
  • 1 tsp dried garlic
  • 1 tsp sweet paprika
  • Vegetable oil
  • Salt to taste

Instructions

  1. Break the cauliflower into florets. Place in a deep bowl, add the spices and salt, and toss.
  2. Drizzle with oil, add the breadcrumbs, and toss again to coat.
  3. Spread on a baking sheet and roast in a preheated oven at 210-220C (410-425F) for 20 minutes until crisp and golden.

Tips

  • Cut the florets into even, bite-size pieces so they roast at the same rate — large chunks stay soggy in the middle while tiny ones burn.
  • Give the florets plenty of space on the baking sheet; overcrowding steams the cauliflower instead of crisping it, so use two trays if needed.
