Creamy baked salmon pasta with cherry tomatoes, spinach and grated Parmesan

Ingredients

  • 400–500 g (14–18 oz) salmon fillet
  • 300 g (10.5 oz) fusilli or any pasta
  • 100 g (3.5 oz) fresh spinach
  • 200 g (7 oz) cherry tomatoes
  • 150 g (5.3 oz) cream cheese
  • Salt and pepper to taste
  • Italian herbs to taste
  • Parmesan, grated, for serving

Instructions

  1. Place the salmon, cherry tomatoes, spinach and cream cheese in a baking dish.
  2. Season with salt, pepper and Italian herbs.
  3. Bake in a preheated oven at 200°C (400°F) for 20 minutes.
  4. Meanwhile, cook the pasta until al dente. Be sure to reserve some pasta water before draining.
  5. Take the baking dish out of the oven and gently mash the salmon, tomatoes and cheese together into a creamy sauce.
  6. Add the cooked pasta and grated Parmesan, toss everything together, and add a splash of reserved pasta water if the pasta looks dry. For another silky seafood pasta, try our Creamy Garlic Shrimp Pasta.

Tips

  • Reserve a cup of pasta water before draining — a splash of it helps the sauce cling to every piece of fusilli. It is the same trick behind our Creamy Garlic Shrimp Pasta.
  • Do not overbake the salmon: it should flake easily but still be juicy, since it goes back into the hot pasta alongside favorites like our Creamy Salmon Soup with Potatoes and Broccoli on busy weeks.
