Recipe infographic: 10-Minute Microwave Potatoes — ingredients and step-by-step visual guide

No oven, no waiting, no fuss — these 10-minute microwave potatoes go from raw wedges to golden, tender bites in a single dish. Tossed with sunflower oil, salt and sweet paprika, they come out steamy and fragrant with lightly crisped edges. They make a brilliant last-minute side next to our Oven-Baked Mackerel with Potatoes, or simply with a dollop of sour cream.

Golden microwave potato wedges seasoned with sweet paprika in a glass dish

Ingredients

  • 330 g (11 1/2 oz) potatoes
  • 8 g (2 tsp) sunflower oil
  • Salt and sweet paprika to taste

Instructions

  1. If the potatoes are young, wash them well; otherwise peel them. Cut into wedges or sticks.
  2. Place in a deep dish, add salt, spices and oil, and mix very well.
  3. Cover with a flat plate and microwave for 10 minutes (a standard reheat setting works). Handle carefully — very hot.

Tips

  • Cut the wedges as evenly as possible so everything cooks at the same rate — thicker sticks may need an extra minute or two.
  • For the crispiest edges, spread the wedges in a single layer and don’t skip the oil. The USDA notes that potatoes are naturally rich in potassium and vitamin C, so this quick side is as nourishing as it is easy.
