Ingredients
- 180 g (6.3 oz) cottage cheese
- 1 egg
- 80 g (2.8 oz) flour
- 50 g (1.75 oz) sugar
- 50 g (1.75 oz) chocolate (dark or milk)
Instructions
- Mix the cottage cheese, egg, flour, and sugar into a smooth dough and fry small syrniki on a skillet until golden on both sides. Let them cool completely.
- Melt the chocolate in a double boiler and coat each syrnik on top.
- Refrigerate for 15 minutes, until the chocolate shell sets.
Tips
- Make sure the syrniki are completely cool before coating — warm pancakes will melt the chocolate coating right off.
- Melt the chocolate gently over low heat so it stays glossy; Serious Eats has great guides on working with chocolate.
- Try white chocolate for the coating too — it pairs beautifully with the tangy cottage cheese.
