Tips
Press the cottage cheese through a sieve or blend it smooth — a lump-free curd makes tender, even syrniki. For another cottage cheese favorite, try my healthy cottage cheese waffles.
Dust your hands with flour and keep the patties small so they cook through without burning. Serious Eats has great guides on pan-frying delicate batters.
Fry over medium heat and don’t crowd the pan — golden crusts need space. Serve warm with sour cream and berries, and find more breakfast ideas at Allrecipes, or try my fluffy cottage cheese muffins next.
