These homemade turkey sausages are juicy, high in protein, and free of anything you can’t pronounce. Ground turkey mixed with cream, egg, and savory spices is shaped into neat sausages, gently simmered, and optionally crisped in a pan. They are a meal-prep dream — much like our Savory Egg Patties with Green Onion — and the USDA guidelines on safe poultry cooking temperatures are worth a quick read before you start.

Ingredients
- 500 g (1.1 lb) ground turkey
- 1 egg
- 100 ml (1/3 cup + 1 tbsp) light cream, 10% fat
- Spices to taste: salt, black pepper, dried garlic, paprika, poultry seasoning, dried herbs
Instructions
- Mix the ground turkey with the egg, cream, and all the spices until well combined.
- Transfer the mixture to a piping bag (or a sturdy plastic bag) for easy shaping.
- Snip off a corner, pipe the mixture onto plastic wrap, roll up like a candy, and tie the ends.
- Simmer in boiling water for about 10 minutes. For a golden crust, pan-fry the cooked sausages briefly.
Tips
- Cook a double batch on Sunday and freeze half — they reheat beautifully in a hot skillet.
- Tie the plastic wrap ends tightly so the sausages hold their shape while simmering.
