These savory egg patties are the kind of recipe you make once and then keep in your back pocket
forever. Crispy on the outside, tender inside, and packed with protein — they come together from just a handful of simple ingredients. Rice flour keeps them gluten-free and gives a delicate crunch, while green onion adds fresh flavor in every bite. They work for breakfast, a light lunch, or a post-workout snack.

Ingredients
- 2 hard-boiled eggs
- 1 raw egg
- 2 tablespoons rice flour
- Green onion, chopped, to taste
- Salt, to taste
- Ghee (or butter), for frying
Instructions
- Peel the boiled eggs and chop them finely together with the green onion.
- Add the raw egg, rice flour, and salt. Mix well until you get a thick, uniform batter.
- With damp hands, shape the mixture into small patties.
- Heat a skillet over low heat with a small amount of ghee.
- Fry the patties covered for 5–7 minutes per side, until deep golden brown.
Tips
Keep the heat low and the lid on — this cooks the patties through without burning the outside. Swap green onion for chives or dill for a different twist. Serve with sour cream or plain yogurt.
