Ingredients
- 400 g (14 oz) mascarpone
- 200 ml (3/4 cup) heavy cream
- 100 g (3.5 oz) sugar
- 3 ripe peaches, sliced
- 20 ladyfinger cookies
- 150 ml (2/3 cup) peach juice
- cocoa or crushed amaretti, for dusting
Instructions
- Whip the cream with the sugar to soft peaks; fold in the mascarpone until smooth.
- Dip the ladyfingers quickly in peach juice and line a dish with them.
- Spread half the mascarpone cream over the ladyfingers, layer with peach slices, then repeat.
- Chill at least 4 hours, then dust with cocoa or crushed amaretti before serving.
Tips
- Use ripe, fragrant peaches for the best flavor — underripe fruit makes the dessert taste flat. Serious Eats has tips on picking perfectly ripe stone fruit.
- Dip the ladyfingers fast — a quick dunk is enough; soaking makes them fall apart. Allrecipes has more no-bake dessert inspiration.
- Chill overnight if you can; the flavors meld and the layers slice much more cleanly.
