Ingredients
- 450 g (1 lb) cottage cheese
- 2 eggs
- 130-140 g (1 cup) semolina
- 80 g (1/3 cup) sugar
- 2 tsp baking powder
- 1/2 tsp vanilla extract
- Fresh fruit or berries for topping
- Powdered sugar for dusting
Instructions
- Mix the cottage cheese, sugar, vanilla, eggs, baking powder, and semolina into a soft dough.
- Let it rest for 10-20 minutes so the semolina swells.
- Shape into rounds, top with sliced fruit (apple works great), brush with a beaten egg, and sprinkle with sugar.
- Bake at 180°C (355°F) for 20-30 minutes, until golden and set.
- Dust the warm vatrushki with powdered sugar before serving.
Tips
- Don’t skip the resting time — letting the semolina swell for 10–20 minutes gives the dough its tender, cake-like crumb. For more baking inspiration, browse the extensive recipe collection at allrecipes.com.
- Use fruit that holds its shape in the oven: apples, pears, or plums are ideal; very juicy berries may sink, so toss them lightly in semolina first.
- Serve them warm with a dusting of powdered sugar and a spoonful of sour cream or yogurt — and try our Baked Cottage Cheese Donuts next for another high-protein treat.
