This baked salmon with spinach and three cheeses tastes like something from a cozy bistro, but it is secretly a weeknight hero. Flaky salmon fillets rest on fluffy rice under a blanket of creamy spinach, blue cheese, feta, and golden mozzarella. It is rich, comforting, and on the table in about 30 minutes.

Ingredients
- 400 g (14 oz) salmon fillet
- 100 g (1/2 cup) rice, cooked
- 50 g (1.7 oz) Dorblu (blue) cheese
- 50 g (1.7 oz) feta cheese
- 30 g (1 oz) mozzarella, grated
- 2 onions, chopped
- 200 ml (3/4 cup + 1 tbsp) heavy cream (30%)
- 300 g (10.5 oz) spinach
- 1 bunch parsley, chopped
- Salt and pepper to taste
- Oil for frying
Instructions
- Saute the onion, add the spinach, cream, Dorblu, and feta; stew until the cheese melts. Season with pepper.
- Spread the cooked rice in a baking dish, layer the fish on top, and pour over the cheesy spinach mixture. Sprinkle with grated mozzarella.
- Bake at 180C (350F) for 15-20 minutes, until the top is golden and bubbling.
Tips
- Do not overbake — salmon is done when it flakes easily with a fork. The USDA recommends cooking fish to an internal temperature of 145°F.
- No Dorblu? Any blue cheese works, or use all feta for a milder flavor. Fans of our Salmon in Creamy Spinach Sauce will love this bake.
- Assemble the dish a few hours ahead and refrigerate; add 5 minutes to the baking time. For more salmon technique tips, see Serious Eats.
