Part custard, part pancake, entirely irresistible — this blueberry and peach clafoutis is the easiest French dessert you’ll ever make. Juicy summer fruit sinks into a silky, crepe-like batter that bakes up golden and puffy. If you love fruity bakes, don’t miss our Peach Kefir Cake.

Ingredients
- 200 g (7 oz) milk
- 4 eggs
- 100 g (3/4 cup + 2 tbsp) flour
- 50 g (1/4 cup) sugar
- Pinch of salt
- 150 g (5.3 oz) blueberries
- 2 peaches, sliced
Instructions
- Whisk the milk, flour, eggs, sugar, and salt until smooth.
- Grease a baking dish with oil and arrange the blueberries and sliced peaches.
- Pour the batter over the fruit.
- Bake at 180C (350F) for 40–45 minutes.
Tips
- Toss the fruit in a spoonful of flour before adding the batter — it helps keep the berries from sinking, a classic trick you’ll find in many baking guides on Allrecipes.
- Don’t overbake: the center should still have a gentle wobble when you pull it from the oven — it sets as it cools.
- Serve warm with a dusting of powdered sugar. For another elegant fruit dessert, try our Peach Tiramisu.
