This peach kefir cake is the easiest way to celebrate peach season. A tender, lightly spiced kefir batter bakes around juicy cinnamon-sugar peaches until golden and set — and it comes together just as easily as our Classic Semolina Kefir Cake (Mannik). Serve it warm with a dusting of powdered sugar and watch it disappear.

Ingredients
For the batter:
- 200 ml (3/4 cup + 1 tbsp) kefir
- 90 ml (6 tbsp) vegetable oil
- 100 g (1/2 cup) sugar
- Pinch of salt
- 200 g (1 2/3 cups) flour
- 1 tsp baking powder
- 2 eggs
For the filling:
- 400 g (14 oz) peaches, sliced
- 2 tbsp sugar
- Cinnamon to taste
Instructions
- Whisk together all the batter ingredients.
- Toss the peach slices with sugar and cinnamon.
- Layer batter and peaches in the pan. Bake at 180C (350F) for 40-45 minutes until golden and set.
Tips
- Use ripe but firm peaches so the slices hold their shape in the oven instead of turning mushy.
- Whisk the batter just until smooth — overmixing will make the crumb dense rather than tender.
- Let the cake rest for 10 minutes before slicing so the peach layers set and cut cleanly.
