Imagine biting through a crisp shell of sugar-free chocolate into a creamy cottage cheese center wrapped around a juicy strawberry — these no-bake bites are pure bliss. High in protein, naturally sweet and ready with just a little freezer time, they are the dessert you will make on repeat, much like our Strawberry Cottage Cheese Pies.

Ingredients
- 120 g (4 oz) soft fat-free cottage cheese
- 2 tbsp desiccated coconut
- 3 medium strawberries
- 80 g (3 oz) sugar-free chocolate
- 1 tsp coconut oil
- Sweetener, to taste
Instructions
- Blend the cottage cheese, desiccated coconut, and sweetener until smooth.
- Shape the mixture into balls around each strawberry and freeze for 15 minutes.
- Melt the chocolate with the coconut oil over a water bath, or in the microwave in 15-20 second bursts.
- Dip each chilled ball into the melted chocolate, set on parchment paper, and refrigerate for 30 minutes until set.
Tips
- Freeze the shaped balls for a full 15 minutes before dipping — a firm, cold center makes the chocolate set into a snappy shell. Find more no-bake inspiration at Allrecipes.
- Melt the chocolate in short 15-20 second microwave bursts, stirring between each, so it stays glossy and never seizes. For another creamy cottage cheese dessert, try our Microwave Mug Cheesecake.
- Keep the bites refrigerated and enjoy within 3 days. They also freeze well — thaw for 10 minutes before serving. For a baked alternative, see our Creamy Cottage Cheese Casserole.
