Crisp, golden lavash cups turn classic Caesar salad into irresistible finger food. Smoky chicken, juicy cherry tomatoes and crunchy romaine are tossed in a creamy garlic dressing, then piled high into edible cups and finished with shaved parmesan. They are perfect for parties, lunch boxes or a light dinner — much like our Cottage Cheese Lavash Rolls.

Ingredients
- 2 large thin lavash sheets
- 170 g (6 oz) smoked chicken breast, diced
- 150 g (5 oz) cherry tomatoes
- 1 head romaine lettuce
- 60 g (2 oz) parmesan
- 70 g (1/4 cup) mayonnaise
- 1 tsp mustard
- 2 tbsp vegetable oil
- 1 garlic clove, minced
- Salt and black pepper, to taste
Instructions
- Cut the lavash into squares, press them into a muffin tin to form cups, and bake at 180 C (350 F) for 5 minutes until crisp.
- Whisk the mayonnaise, mustard, oil, garlic, salt, and pepper into a dressing.
- Toss the smoked chicken, halved cherry tomatoes, and chopped romaine with the dressing.
- Fill the lavash cups with the salad and garnish with a whole cherry tomato and shaved parmesan.
Tips
- Bake the lavash cups until just golden at the edges — they keep crisping as they cool. For another crowd-pleasing appetizer, try our Tuna Bruschetta with Cream Cheese.
- Toss the salad with the dressing right before filling so the cups stay crunchy. Serious Eats has excellent guides to classic Caesar dressing.
- Swap the smoked chicken for grilled shrimp or crispy chickpeas to change things up.
