This bruschetta with shrimp salsa is the appetizer that disappears first. Crispy toasted baguette meets a zesty lime-and-chili salsa and buttery garlic shrimp — bright, fresh and ready in minutes. Perfect for summer gatherings, holiday platters or a fancy-feeling weeknight.

Ingredients
- 1 baguette
- 1 red onion
- 2 tomatoes
- 1/2 chili pepper
- 2 garlic cloves
- Lime juice
- Cilantro or fresh herbs
- 1 tbsp vegetable oil
- Shrimp
- Butter
Instructions
- Finely dice the red onion and chili. Blanch the tomatoes, peel them, and dice finely as well.
- Press the garlic, chop the herbs, then add the lime juice and vegetable oil and toss the salsa together. Saute the shrimp in butter with garlic (fresh shrimp 3 minutes, pre-cooked pink shrimp 1 minute).
- Slice the baguette thinly and toast the slices in a dry skillet.
- Top each slice with salsa and shrimp, and garnish with herbs if you like.
Tips
- Blanch the tomatoes for 30 seconds so the skins slip off easily — this keeps the salsa silky rather than watery. Dice everything small so the salsa sits neatly on the baguette.
- Toast the baguette slices until deeply golden in a dry skillet; they are the crunchy base that holds everything together. Sear fresh shrimp hot and fast — 3 minutes is plenty — so they stay juicy.
