This cheesy lavash bake is the coziest shortcut to a golden, bubbling casserole. Torn lavash soaks up a savory cottage cheese custard and turns oven-crisp on top while staying soft and cheesy underneath. It is a hearty weeknight dinner or a crowd-pleasing brunch side.

Ingredients
- 200 g (3/4 cup + 2 tbsp) cottage cheese (5%)
- 2 eggs
- 150 ml (1/2 cup + 2 tbsp) milk
- 100 g (3.5 oz) cheese
- 150 g (5.3 oz) lavash
- Salt
Instructions
- Add the eggs and salt to the cottage cheese and pour in the milk. Mix well. Grate the cheese on a coarse grater, tear the lavash into pieces, and add everything to the cottage cheese mixture.
- Stir, transfer to a baking dish, and bake in a preheated 180 C (350 F) oven until golden, about 40 minutes.
Tips
- Tear the lavash into rough bite-size pieces instead of cutting it — the ragged edges soak up the custard and bake up wonderfully crisp on top.
- Let the bake rest for 10 minutes after it comes out of the oven so the custard sets and it slices neatly.
