Craving carrot cake but short on time? These soft, warmly spiced carrot cake bites come together in the microwave in just 4 minutes, then get layered with a silky cottage cheese frosting. They are light, naturally sweet and perfect when you want dessert without the fuss — much like our Lazy Cottage Cheese Cheesecake.

Ingredients
- 80 g (2.8 oz) grated carrot
- 1 egg
- 50 ml (about 3 tbsp) milk
- 3 tbsp corn flour (or any flour)
- 1/3 tsp baking powder
- A pinch of cinnamon
- Chopped nuts to taste (optional)
For the frosting:
- 150 g (5.3 oz) soft cottage cheese
- Sweetener to taste
- Cinnamon and a little orange zest to taste (optional)
Instructions
- Stir all the cake ingredients together and pour into a microwave-safe mug or dish.
- Microwave on full power for 4 minutes.
- Cut the cooled cake into 3 layers.
- Whip the frosting ingredients together until smooth, spread between the layers, and refrigerate for 1 hour before serving.
Tips
- Grate the carrot finely so it melts into the batter and keeps the bites moist.
- Microwave ovens vary, so start checking at 3 minutes — the cake should be just set in the center.
