This farmer cheese yeast pie is the cozy bake you’ll want to make again and again. Pillowy yeast dough hugs a creamy, lightly sweet cottage cheese filling — pure comfort in every slice. If you loved our savory egg and green onion pie, this sweet cousin belongs on your baking list.

Ingredients
- For the dough: 450 g (3 3/4 cups) flour
- 250 ml (1 cup) warm milk
- 1 packet (7 g) dry yeast
- 60 g (1/3 cup) sugar
- Vanilla sugar, to taste
- 1/2 tsp salt
- 80 g (5.5 tbsp) butter, melted
- 2 egg yolks
- For the filling: 500 g (1.1 lb) cottage cheese (9%)
- 70 g (1/3 cup) sugar
- Dried fruit, optional
- 2 eggs
- 1.5 tbsp cornstarch
Instructions
- For the dough, mix the warm milk, yeast, and 2 tsp sugar; rest 15 minutes. Add the melted butter, yolks, salt, flour, and vanilla sugar; knead a soft dough and let rise in a warm place for 1 hour.
- For the filling, mix all ingredients (blend grainy cottage cheese with an immersion blender if needed).
- Divide the dough in two and assemble the pie.
- Brush with yolk mixed with milk and bake at 180C (350F) for 20-25 minutes.
Tips
Make sure the milk is warm, not hot, or it will kill the yeast and the dough won’t rise. For an extra-smooth filling, blend the cottage cheese before mixing — it makes all the difference.
