Ingredients

  • For the dough: 450 g (3 3/4 cups) flour
  • 250 ml (1 cup) warm milk
  • 1 packet (7 g) dry yeast
  • 60 g (1/3 cup) sugar
  • Vanilla sugar, to taste
  • 1/2 tsp salt
  • 80 g (5.5 tbsp) butter, melted
  • 2 egg yolks
  • For the filling: 500 g (1.1 lb) cottage cheese (9%)
  • 70 g (1/3 cup) sugar
  • Dried fruit, optional
  • 2 eggs
  • 1.5 tbsp cornstarch

Instructions

  1. For the dough, mix the warm milk, yeast, and 2 tsp sugar; rest 15 minutes. Add the melted butter, yolks, salt, flour, and vanilla sugar; knead a soft dough and let rise in a warm place for 1 hour.
  2. For the filling, mix all ingredients (blend grainy cottage cheese with an immersion blender if needed).
  3. Divide the dough in two and assemble the pie.
  4. Brush with yolk mixed with milk and bake at 180C (350F) for 20-25 minutes.

Tips

Make sure the milk is warm, not hot, or it will kill the yeast and the dough won’t rise. For an extra-smooth filling, blend the cottage cheese before mixing — it makes all the difference.
