Potato bacon mushroom cheese bake, golden and bubbling, served from the dish

Ingredients

  • 3-4 potatoes
  • 2 packs bacon
  • 400 g (14 oz) mushrooms
  • 160 g (5.5 oz) cheese
  • 100 g (1/2 cup) cream (20%)
  • Fresh herbs, to taste
  • Onion, to taste
  • Garlic, to taste
  • Salt and spices, to taste

Instructions

  1. Boil the potatoes. Saute the mushrooms in a little oil until the liquid evaporates.
  2. Add finely chopped onion and garlic; fry until golden, season, and pour in the cream.
  3. When the cream thickens, remove from heat.
  4. Lay out the bacon slices slightly overlapping; layer boiled potatoes, mushrooms, herbs, and cheese; repeat the layers.
  5. Cover with foil and bake at 200C (400F) for 30 minutes.
  6. Remove the foil and bake 10 more minutes until the bacon browns.

Tips

Sauté the mushrooms until all their liquid evaporates — that’s the secret to deep flavor instead of a watery bake. Let the bake rest 10 minutes before slicing so the layers set neatly. Mushroom lover? Try our mushroom and mozzarella tart next, and find more comfort-food ideas on Allrecipes.
